Great savory sauce for perciatelli: chop 8 olives stuffed with anchovies (or skip anchovies if you don't like them) but used a cured, flavorful olive; soak about 1/2 cup of dried cranberries in enough water to cover; handful of pine nuts; 1/4 cup seasoned bread crumbs; chopped Italian parsely; 1 tablespoon Italian herbs; red pepper flakes. Top with grated Reggiano Parmagiana. Put all this in a frying pan and heat while pasta is cooking; toss pasta in to coat and serve. DeCecco is always a reliable brand, makes a great gift basket for a cook.
Perciatelli is most famous for its use in Amatriciana. Kids love it because the can use it like a straw.
