Handy for intermediate-level cooks looking to boost savory flavors. Not for advanced cooks.Feb 25, 2011
By Aaron Contorer As an advanced home cook I am not thrilled with this product, because frankly it brings flavors that are already common in my cooking and that I know how to add and control. However, I definitely could have used it some years ago when my skill level was intermediate, when I kept wondering "why does my chili taste so bland" and so on.
The overwhelming flavor is of sundried tomato, followed by other musty Italian flavors (indeed it's made in Italy). Basically it's tomato-anchovy-olive tapenade.
The ingredients are so simple that you can easily prepare your own version of this product: tomato paste, garlic, anchovy paste, black olives, balsamic vinegar, dehydrated Porcini mushrooms, Parmesan cheese, citric acid, olive oil, wine vinegar, sugar, salt. If you usually have most of these ingredients on hand, just use them in whatever ratio you like and skip this product. (No anchovy paste? Try anchovies, Asian-style fish sauce, or even sardines.)
If, on the other hand, you don't usually stock most of these ingredients, you may find this paste an exciting and easy way to strengthen the savory depth of your dishes.

By S. Bae Very excited when this item finally arrived. I was expecting something like truffle or bone marrow but it tastes very similar to doenjang, a Korean soybean paste. I have yet to try it in pasta or other dishes but am sure it will add that "something extra" to any food item.

By Mark Twain I love anchovies. Were it not for the killer sodium, I would go through at least one can a week. Keep that in mind as I go on. I tried and tried for nutritional info. Found none, ordered with fingers crossed [I even called a foodie catalogue that featured this product thinking the nutritional info would pop up there. Nope.] From the box:
1 TBS 25 calories, 1.5g total fat, 0 saturated, 320 mg sodium [13% daily value]. Also from the box, throw it out 1 month after opening.
Now, here is where fishy multiplied comes in. On first opening: flavor ok, definitely a fishy taste. But, I like fishy and over the first few days found myself trying it in many things I made. But, as the days went on, the fishy taste became stronger and stronger. After a week or so I just stopped using it. Granted, I was using it lightly as the sodium level is pretty high for one tablespoon added to recipes that already contained salt. The remaining 3 tubes [mine came in a package of 4] have Nov 2012 as the expiration date and I am sure I will open [use up????] them. Would I recommend to a friend? Nope. Would have the friend taste this stuff about two weeks after opening and let him/her vote with his/her own tastebuds.

As an avid griller, I find this umami paste a great supplement to my cooking technique. My discriminating tasters comment on the flavor of my prepared foods and I always tell them the story of umami and where to get this paste. I'll be ordering more soon.

I had tried to, without success, order this product in the past, but each time it was out of stock. Happily, I was able to order and receive it this time. I have found it to be a great substitute for any recipe that calls for anchovie paste or tomato paste as it gives them another depth of flavor that they did not have before. I also ordered a 3 pack for my son-in-law's birthday and the Laura Santini cookbook for my daughter so she can make good use of the Umami paste.
