First cold pressing means that the olives are pressed only once within hours of being picked and are not heated to increase yields. This method ensures that the bouquet and flavor of the olives are kept intact. "Ogliarolas" give Masserie di Sant'Eramo Delicate Extra Virgin Olive Oil outstanding smoothness; the other varieties contribute fruitiness and complexity to the blend. This "Delicate" oil is bottled in dark green glass to protect it from light and safeguard its excellent nutritional properties.
