This 6-month-old Tuscan Pecorino serves well as a table cheese and a grating cheese. With a red wax seal and cocoa-colored rind, its hard, glossy crust is created by a continual greasing of olive oil. Its firm, ivory paste is sweet and milky, indicative of the great Tuscan pecorinos. Enjoy with beautiful Chiantis, Brunello di Montalcinos and Vino Nobile di Montepulcianos
