To supply honey that is both tasty and nutritious, the hives are kept far away from urban and intensively farmed areas where polluting factors would damage it. Furthermore, the honey is processed at very low temperatures - a technique created and patented by the Rigoni family. A further assurance that the nutrients are unharmed. Laboratory certification tests are a further guarantee that the honey is free of any chemicals.
Italian chestnuts used to be cultivated and milled as an alternative flour to make bread. Nowadays chestnut trees grow spontaneously right across Italy and the blossom with a little honeydew makes a chestnut-brown liquid honey. Since this is rich in minerals, the intense flavor suits yogurts and creamy desserts. It is also delicious with mature and blue cheese. | | | Features: | |

Tannic and bitter overpower the sweetOct 21, 2011

I am glad for the chestnut growers that the bees are there to pollinate their trees, but I cannot say I like the resulting honey. The tannin and bitterness of this honey, not its power, are what I dislike (I like a manuka, which has quite a powerful, rich breadth of flavors). But there you have it - I dislike it, and cannot recommend it, yet Mr Layka from New York adores it.
