Pronounced Sh-pek Tear-o-lesay, Speck is cut from the upper portion of the hind-quarter and is air dried and lightly smoked to impart flavor. The Tirolese Speck is lighter in smoke flavor and denser in texture than the Alto Adige Speck.

By thenons speck arrived without dry ice put had package that ice was to be in,hopefully because meat is curd will still be okay for holidays
